WIAW: Training Eats

It's Wednesday, and you know what that means: time for another lovely What I Ate Wednesday!

I have an announcement to make, and one that I have only shared with family and a few close friends: I am currently training to be a Zumba instructor! At the suggestion of my instructor and after years of passionately loving the workout, I am ready to take the leap. Also, this will be an amazing milestone in my year-long journey to a healthier lifestyle.

I will be getting my certificate on October 18th after a full day of instructor training. Until then, I will be working out harder than ever and eating healthy noms so that I will be at my physical peak during the certification.

Here are some of my favorite healthy meals as I train to become a Zumba instructor!

Breakfast


Pumpkin Overnight Oats made with oats, almond milk, pumpkin butter, pumpkin pie spice, and cinnamon, topped with some cinnamon almonds. Also, coffee is ALWAYS better from a cat mug.

Lunch


Spinach-Turkey Burger over quinoa with avocado, hummus, and tzatziki. It's not the prettiest, but damn was it delicious.

Snack


Peanut Butter Greek Yogurt with pink lady apple slices and peanuts. To make the yogurt peanut butter-y throughout, I mix in 2 tbsp of powdered PB and 1tbsp of water.

Dinner


Mexican Baked Sweet Potato with black beans, tomato slices, avocado, non-fat mozzarella cheese, and tzatziki. This takes about five minutes to put together: perfect for a busy college student!

I keep using Pinterest to find more healthy recipes before my big certification day, so expect more protein-packed meals in the coming weeks.
