One of my favorite things about going to college in Ithaca, New York is the local food scene. Although the city is small, it is bursting with incredible food options. There are major local and slow food movements, and there are more restaurants per square mile than in Manhattan (!!). Plus, with shopping meccas such as Wegman's, the Ithaca Farmer's Market, and Greenstar, I've been having a great time making quick and easy meals in my kitchen.
Here are some simple recipes I've made since getting back on campus!
Lemon-Dill Hummus Crusted Salmon on a bed of kale, avocado, tomato, and ginger miso dressing
Whole Grain Pasta in Zucchini and Mushroom Marinara with parmesan asparagus, caprese salad (using Farmer's Market pesto!), and bruschetta
Feta and Spinach Turkey Burger on a Pita with kale, avocado, tomato, hummus, and sriracha chili sauce
Teriyaki Chicken with a kale, avocado and pesto salad with cheddar biscuits

looks like you're eating pretty well! i'll take that zucchini + mushroom marinara, please. in college, i think i ate easy mac at least twice a week. but... i didn't have a kitchen. so i call it acceptable. :p
